On PC you simply equip the bow that you want to aim with and Right Click to use two hands on the bow and then right click again to bring up the aiming reticle. As a general rule the longer the arrow shaft the longer the fletchings and vice versa. When buying crossbow bolts they will always have a set of fletchings glued to them.
